Fudge using Marshmallow

I'd always wanted to try making fudge the American way, with Marshamllow fluff. My dear friend Kat (from Whangarei cake tin hire) also wanted to try it, so I sent her home with a jar of Marshamllow fluff and a bag of chocolate. The result was delicious.
For those of you that want to try it yourself.

What You Need
3 cups sugar
170g butter or margarine
1 small can (5 oz.) evaporated milk (about 2/3 cup) (Do not use sweetened condensed milk.)
360g dark chocolate (can use cooking chocolate)
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 cup chopped Walnuts
1 tsp. vanilla

Make It
LINE 9-inch square pan with foil, with ends of foil extending over sides of pan; set aside. Place sugar, butter and evaporated milk in large heavy saucepan. Bring to full rolling boil on medium heat, stirring constantly. Boil 4 min. stirring constantly to prevent scorching. Remove from heat.
ADD chocolate and marshmallow creme; stir until completely melted. Add walnuts and vanilla; mix well.
POUR immediately into prepared pan; spread to form even layer in pan. Let stand at room temperature 4 hours or until completely cooled; cut into 1-inch squares. Store in tightly covered container at room temperature.

SPCA Cupcake day August 31st 2009


We all know what a great job the SPCA does looking after the unloved & mistreated animals in New Zealand, but what many do not know, is this organisation is NOT government funded. I have always donated to the SPCA appeals, but when I saw the "SPCA Cupcake day" I couldn't wait to get involved.

I will be producing animal themed cupcakes for the SPCA cupcake day August 31st 2009, they will be available for $2 each. I just received this by email

Sometimes things you receive by email are just too funny for words. Thanks for sending this through Fiona

This is a true story. (so I'm told)
A little background: Neiman-Marcus (Needless-Mark Up), if you don't know already, is a very expensive boutiqueshop (they sell a typical $8.00 T-shirt for $50.00)
My daughter and I had just finished lunch at a Neiman-Marcus Cafe in Dallas, USA . Because both of us are such biscuit lovers, we decided to try the 'Neiman-Marcus cookie'. It was so excellent that I asked if they would give me the recipe. The waitress said with a small frown, 'I'm afraid not, but you can buy the recipe.'
I asked how much, and she responded; 'Only two fifty - it's a greatdeal'
I agreed to that, and told her to add it to my bill.
Thirty days later, I got my Visa statement, and the Neiman-Marcus charge was $285. I looked at it again, and I remembered I had only spent $9.95 for two sandwiches and about $20 for a scarf. At the bottom of the statement, it said, 'Cookie Recipe - $250.00'.
That was outrageous! I called Neiman's Accounting Department and told them the waitress had said it was 'two fifty', which clearly does not mean 'two hundred and fifty dollars' by any reasonable interpretation of the phrase. Neiman-Marcus refused to budge. They would not refund my money because according to them; 'What the waitress told you is not our problem. You have already seen the recipe. We absolutely will not refund your money". I explained to the Accounting Department lady the criminal statutes which govern fraud in the state of Texas. I threatened to report them to the Better Business Bureau and The Texas Attorney General's office. I was basically told: Do what you want. Don't bother thinking of how you can get even, and don't bother trying to get any of your money back' I said, OK, you've got my $250, and now I'm going to have $250 worth of fun. I told her that I was going to see to it that every cookie lover in the world with an e-mail account gets a $250 cookie recipe from Neiman-Marcus for free. She replied, 'I wish you wouldn't do that.' I said, 'Well, perhaps you should have thought of that before you RIPPED ME OFF!' and slammed down the phone.
So here it is! Please pass it on to everyone you can possibly think of. I paid $250 for this, and I don't want Neiman-Marcus to EVER make another penny from this recipe!
NEIMAN-MARCUS COOKIES
(Recipe may be halved as this makes heaps)
2 (500 ml) cups butter
680 g chocolate chips
4 (1000 ml) cups flour
2 (500 ml) cups brown sugar
2 tsp. (10 ml) Bicarbonate of soda
1 tsp. (5 ml) salt
2 (500 ml) cups sugar
500 g Grated Cadbury chocolate
5 (1250 ml) cups blended oatmeal
4 eggs2 tsp. (10 ml) baking powder
2 tsp. (10 ml) vanilla
3 cups (375 ml) chopped nuts (optional)
Measure oatmeal, and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and bicarbonate of soda. Add chocolate chips, grated Chocolate and nuts. Roll into balls, and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees (180 C).
The above quantities make 112 cookies. Enjoy!

Ameri Mist Blending Hints
Apricot – 1 part orange & a touch of peach
Grape – 8 parts burgundy & 3 parts royal blue
Juniper Green – 1 part forest green & 1 part orange
Lavender – 2 parts deep pink & 1 pt violet
Maroon – 1 part burgundy, 1 part super red & touch of royal blue
Plum – 3 parts violet & 1 part Christmas red
Sea Foam Green – 2 parts forest green & 1 part ivory
Avocado – 6 parts ivory & touch of sky blue
Gold – 4 parts egg yellow & 1 part chocolate brown
Khaki (Olive Green) – 3 parts lemon yellow, 2 parts violet & touch of mint green
Moss Green – 1 part leaf green & 1 part orange
Purple – 1 part violet & 1 part deep pinkSilver – 1 part super black, 1 part royal blue & 1 part bright white
Flesh tone – 2 parts bright white & 1 part peach
Jade – 2 parts forest green & 1 part leaf green
Lion Color – 5 parts egg yellow & 1 part chocolate brown
Navy Blue – 5 parts royal blue, 2 parts super black & 2 parts violet
Raspberry – 6 parts Deep Pink, 1 part super red & touch of violet
Tan – 5 parts egg yellow & 3 parts chocolate brown.

Remember if you want a deeper shade, use more colour. If you want a lighter shade, use less colour. Always mix your colours at least an hour in advance because they deepen with time. Colours will vary depending on what type of icing or whipped topping you use. It is suggested that you practice in a small amount of icing before using a whole batch. These blends were created specifically for Ameri Colour Soft gel paste and Ameri Mist Airbrush colours.

PRIMARY COLOURS

Red, Yellow, & Blue which are located in the centre of the wheel. All other colours are made from these.


SECONDARY COLOURS

Are located in the inner ring. Orange, Green, Violet, are made by mixing equal amounts of primary colours. Red + Yellow = Orange, Red + Blue = Violet, Blue + Yellow = Green


TERTIARY COLOURS

Located in the outer ring. These colours are made by mixing one primary colour with one secondary colour.
Red + Orange = Red orange, Orange + Yellow = Orange yellow, Yellow + Green = Chartreuse, Green + Blue = Aquamarine, Blue + Violet = Indigo & Violet + Red = Violet red

Major upgrade - not quite complete

Well on the Tuesday the major upgrade started. We now have aa new front page announcing PartyKiwi joining Kiwicakes. The new layout is there in it's most basic form. BUT as yet we don't have our fancy graphics or drop down menus, as they were conflicting with the speed of the site. So until this issue is sorted, we are currently at our new look for a short time. Let me know what you all think of it.
